Coconut Chocolate Shortbread
This recipe was given to me by a work colleague when I first started working. We both worked in the old Coles Variety Store on the main street of Murwillumbah. Once I left Coles, I worked on Lord Howe Island and made this slice for guests to enjoy. Maybe you have a story about one of your favourite recipes. You need a cookie fix and it’s got to have chocolate, and it’s got to be quick and it’s got to be delicious! You’ve just found it! They’re simple and delicious and truly a project that brings joy to our lives.

BASE:
115 grams of butter – melted
1/2 cup caster sugar
1 cup SR flour ½ cup coconut
Pinch salt
Combine all ingredients and spread into a 7 x 11 tin. Cook in a moderate oven until browned. While still hot, spread it with the topping. When cool, cut into slices.
TOPPING:
3 tablespoons of condensed milk
1 tablespoon of cocoa
1 teaspoon of vanilla
1 cup of icing sugar – sifted
28 grams of butter – melted
1 cup coconut
Combine all ingredients and beat well.
